Gluten Free Sticky Date Pudding Recipe

Here’s a delicious recipe for making a gluten free sticky date pudding.

Ingredients

  • 225g brown sugar
  • 95g butter
  • 2 eggs
  • 280g Well and Good Self Raising Flour
  • 225g pitted dates cut in half
  • 280g boiling water
  • 1 Tsp bicarb

Caramel Sauce:

  • 200g butter
  • 200g brown sugar
  • 200g cream

Method

  1. Spray and line desired tray (approx. 20cm). Preheat over to 180°C.
  2. Place in a bowl the cut dates, bicarb soda, and boiling water. Set aside to soften until needed.
  3. In a separate mixing bowl, cream butter and sugar in a table mixer until light and creamy.
  4. Stop the mixer and scrape down the sides of the bowl and continue mixing to ensure the ingredients are well combined.
  5. While still mixing add the eggs one at a time. When the egg is fully mixed through drain the liquid from the dates and add 1/3 of the liquid to the mixing bowl followed by 1/3 of the flour and repeat until all of the liquid and the flour is mixed through. Slow down your mixture and add the dates. Don’t over-mix at this point or your dates will dissolve into your mixture.
  6. Place in one large tin or individual ramekins and bake for 50min.
  7. For the sauce: Into a small pan add the cream on the bottom and then the butter and the brown sugar. Heat until combined – try not to boil.
  8. Garnish with ice cream and chopped nuts.
