Vegan Cheesy Mac Bites Recipe

This is a simple recipe for making turning Mac and Cheese into delicious muffin bites. Their mouth watering, crispy top combines perfectly with the creamy Mac.

These Mac Bites are ideal for kid’s school lunches or taking to work for a mid-morning snack. Get creative by adding extras like fried bacon, mushroom, and parsley.

Cheesy Mac Bites Recipe

Ingredients

  • 1 packet Well and Good Cheesy Mac, made as directed.
  • 2 eggs
  • Gluten free crumbs
  • Dairy free margarine

Method

  1. Preheat the oven to 180°C.
  2. When the Mac is cooked, stir through the eggs and any added extras you would like to put in. Spray a
    cupcake tray and fill with 1/3 cup of the mixture.
  3. Melt some dairy free margarine and stir through your gluten free crumbs until It forms a firm, wet sand consistency
  4. Sprinkle on top of your muffin bites and place them in the oven. Bake for 20 minutes.
  5. Remove from the oven and allow to sit for 5 min, then remove them from tray.

Eat these snacks warm or store them in an airtight container in the fridge for 2-3 days.
