Gluten Free Lemon Coconut Halloween Cake

If you’re trying to decide on a cake for Halloween, then try this Spider’s Web Lemon Coconut Cake. It’s a quick and easy option that kids and adults will devour.

We used our Lemon Coconut Cake mix which is available online as well as at Woolworths and selected independent supermarkets.

Gluten Free Lemon Coconut Halloween Cake

Serves: 8-12
Prep: 15 minutes
Bake: 40 minutes + cooling

Ingredients

  • 2 x Well & Good Lemon Coconut Cake Mix (contains goji berry icing)
  • 4 eggs
  • 150g dairy-free margarine
  • 250ml water
  • zest of 2 lemons
  • 1 cup lemon curd
  • 1 small tube black icing writing
  • ¼ cup dark chocolate chips, dairy-free
  • 2 tablespoons candy decorations
  • Plastic spiders for decoration

Method

  1. Preheat oven to 160°C fan forced and grease and line two round baking tins with baking paper.
  2. Combine eggs, margarine, lemon zest, water and cake mix in a large bowl. Beat with electric mixer for 1 minute. Pour batter evenly between 2 baking tins and allow sitting for 10 minutes.
  3. Place into the oven and bake for 30 minutes. Open oven door, turn tin around to evenly colour and bake for a further 10 minutes. Remove from oven, and cool on wire rack.
  4. Once cake is completely cooled, place one cooked cake onto cake plate and spread the lemon curd evenly with a spatula. Place the next cake layer on top.
  5. Combine the goji berry icing with water (as recommended) and stir into a paste. Top the cake and evenly spread using an offset spatula. Dip spatula in warm water to help spread icing.
  6. Time to decorate! Using a ready-made tube with black icing, create a spider web, place plastic toy spiders onto cake and press chocolate chips onto the lower edge of the cake. Serve and enjoy!
