It is very simple to make thanks to the Well and Good choc banana bread mix which is gluten free, soy free, nut free and dairy free. If you want to reduce the sugar content you can choose to leave out the chocolate swirl which comes in a separate sachet with the banana bread mix.
How to make raspberry banana bread
To start with, you’re going to use our basic choc banana bread recipe that uses our Well and Good baking mix. Follow that recipe with one small change. You’re going to fold in 1 cup of fresh (or frozen) raspberries at the same time that you fold in the choc swirl. Easy!
Don’t be afraid to get creative with this banana bread mix. Through our experimenting, we found a wide range of ingredients could be added including, fresh fruit, dried fruit, chocolate chips – they all worked really well.
Tips
- Fresh raspberries give the best tasting banana bread but they can be very expensive out of season. Feel free to use frozen fruit to save money! It’s always convenient to have a bag in the freezer ready to go!
- Mascarpone is a fantastic addition to banana bread along with a drizzle of honey. For a simpler option, add butter or your favourite non-dairy spread.
- Butter each side of a few slices and shallow fry for a few minutes to create a tasty french bread for breakfast.
