Pecan and Date Banana Bread Recipe

You bring to the party

  • 3 Medium eggs
  • 1 Banana
  • ¾ Cup of Yoghurt
  • 100g Dates
  • ¼ tsp of Bicarb
  • 150g Pecans, toasted

Let’s get this party started!

1. Preheat your oven to 175°C (160°C fan-forced). Grease and line a 22x12cm loaf tin.
2. Puree yoghurt and banana together. In a separated bowl place dates
and bicarb. Cover with boiling water. When softened drain the liquid
and discard.
3. In a mixing bowl, combine eggs, yogurt mix, dates and Banana Bread
mix, and mix with an electric mixer on a medium speed for 1 minute.
Fold though pecans Pour half the batter into the prepared tin.
4. Stick your creation in the oven for 40-50minutes. Once baked, leave
in the tin to cool for 5 minutes then transfer to a wire rack and allow to
cool.
