Low carb lavosh

Ingredients

  • 150ml Tap Water
  • 1.5 Tablespoons Nutritional Yeast
  • 100ml Olive Oil
  • 3 heaped teaspoons Psyllium Husk
  • 1 packet of Low Carb Seeded Bread Mix
  • Rosemary Finely Chopped
  • Flaked Sea Salt
  • Extra Olive Oil For brushing

Method

  1. Preheat oven to 200°C.
  2. Set 1 Tablespoon of Low Carb Seeded Bread Mix aside for dusting later. This will only be required if you are going to use a rolling pin to roll the dough directly on the bench.
  3. Whisk Water, Nutritional Yeast, Olive Oil and Psyllium husk in a Medium bowl. Using a wooden spoon, add the rest of the Low Carb Seeded Bread Mix and mix until combined.
  4. Turn dough out onto the bench and lightly knead to bring it together.
  5. Place ¼ of the dough between 2 sheets of baking paper and roll it out as thin as it can go. The thinner you roll the dough, the crispier your lavosh will be.
  6. Place the sheet of dough onto a lined baking tray. You can leave these sheets whole or, using a knife or a pizza wheel, cut your dough to the required shape. Brush the top with Olive Oil and sprinkle with chopped fresh Rosemary and Flaked Sea Salt.
  7. Place in the oven and bake until golden brown Approx. 8 min
  8. Repeat this process for the rest of the dough.

Quick advice

  • Got no nutritional yeast? It’s fine to leave this ingredient out, but you’ll reduce the flavour punch.
  • For the ultimate crunch: When all of the biscuits are baked, place them on one baking tray and put them back into the oven at 80°C until fully dry.
  • Get creative: You can flavour lavosh with a lot of different herbs, spices, and seeds.
