Gluten Free Chocolate Muffin Recipe

Ingredients

  • 1 packet (400g) Well and Good gluten free Muffin Mix.
  • 2 eggs
  • 1 cup (250ml) water
  • 170ml oil
  • 1/2 cup cocoa
  • 1 cup chocolate chips (or chopped-up dark chocolate)

Method

  1. Preheat your oven to 185°C (170°C fan forced)
  2. Grease or line 10 cup muffin tray.
  3. In a large bowl combine Muffin Mix with eggs, water, oil, and cocoa. Mix well until all ingredients are well combined.
  4. Add chocolate and stir until combined.
  5. Spoon the mixture into a muffin tray and set to bake for 24-28 minutes.
  6. Rest for 5 minutes in the tray then cool on a wire rack.
  7. Serve on their own or topped with chocolate frosting.
