4 Simple Australia Day Recipes

Gluten Free ANZAC BiscuitsAustralia Day means something different to everyone. For some, it’s simply about enjoying this wonderful country we live in and maybe taking a trip to the beach. For others, it’s a perfect opportunity to invite family and friends and to entertain these guests with yummy Australian food. If you fit into the second category then it’s time to start thinking about what you’ll be preparing for Australia Day. Here are a few really easy recipes that work perfectly with our national day. They’re also gluten free so no-one needs to miss out!

Australia Day Recipes

1. Classic Mini Pies

Using the Well and Good pastry flour makes this recipe child’s play. It’s simply a case of mixing the flour with water and margarine to create a superb savoury pastry which you can add you preferred filling to. Sweet or savoury, you choose!

2. Lemon Coconut Slice

This slice is tribute to an Australian classic, lemon slice. The combination of creamy coconut and zesty lemon with goji berries make this a winner. The best part is, all the work has been done – you can make this one with the Well and Good Lemon Slice Mix.

3. Lamingtons

Lamingtons are loved by young and old. For a gluten free lamington you start with sponge cake using the Well and Good Sponge Mix. Then add chocolate or strawberry coating using Aeroplane jelly crystals and finish with a sprinkle of coconut.

Using the Well and Good plain flour you can bake gluten free cookies that are a perfect snack for Australia Day.
