Gluten Free Sponge Cake Recipe

What you’ll need

For the cake:

  • 1 packet of cup cake mix
  • 2 eggs
  • 1/2 cup water
  • 100g butter or margarine

For the icing:

  • Vanilla icing sachet
  • 100g butter or margarine
  • Sprinkles
Method
  1. Preheat your oven to 180°C.
  2. Line or grease a single sponge cake tray.
  3. In a large bowl beat the eggs and butter until whipped, then add the water and whisk.
  4. Stir in the cupcake mix and continue to mix until light and fluffy.
  5. Spoon the mixture into your sponge tray and bake for 20-25 minutes.
  6. Cool before removing from the tray.
  7. Add the butter and vanilla icing sachet to a clean bowl and whisk for 3 minutes until light and fluffy.
  8. Pour and spread over your cooled cake, allowing the icing to drizzle over the sides of the cake.
  9. Finish with the sprinkles and enjoy.
